점봉산산채 (jum boeng saan saan cheh)

This family-owned vegetarian restaurant harvests roots, herbs, mushrooms and other edibles directly from the wild Sorak Mountain, a much beloved national treasure of South Korea. They are fermented in large containers (both traditional and modern), then seasoned and stored in the wooden refrigerator in the backyard of the restaurant. They are also sold as dried goods, as well as concoctions of medicinal beverages (in the tall glass jars).

The taste difference is truly stark to the other foods of Korea and the matriarch and her sons take great pride in this distinction. www.herbparadise.net
